Charred Cider & Maple Glazed Carrots
2 tablespoons unsalted butter (if you use salted, omit the salt in the recipe)
1 small white onion, halved and thinly sliced
2 cloves garlic, finely chopped
1 pound carrots cleaned and slices
2 tablespoons real maple syrup
2 tablespoons apple cider vinegar
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons finely chopped fresh parsley
1 tsp. dried tarragon
Melt butter over medium-high heat in large nonstick pan (cast iron is best) and cook onion, stirring occasionally, until soft & translucent. Remove from pan & set aside.
Add garlic and carrots and cook 5 minutes, stirring occasionally, until
carrots are almost tender.
Stir in syrup, vinegar and tarragon. Continue cooking until liquid is reduced
and carrots are coated.
Season with salt and pepper and sprinkle with parsley.
