Happy Groundhog Day!

Here is a delicious recipe to make alongside your favorite main dish, but first, some Groundhog Facts!


All groundhogs have 22 teeth.

They whistle when alarmed or when they are courting.

They are vegetarian; they eat greens, fruits and vegetables.

The average groundhog weighs 12 to15 pounds, but Punxsutawney Phil weighs 20 pounds.

They hibernate, and each one has his own burrow.

Their burrows have two doorways.

They can swim and climb trees.

They can run up to 9 miles an hour.

A baby groundhog is called a kit or a cub.

Their average life span is 6 to 8 years.

They can lose half their body weight during hibernation.



Charred Cider & Maple Glazed Carrots

2 tablespoons unsalted butter (if you use salted, omit the salt in the recipe)

1 small white onion, halved and thinly sliced

2 cloves garlic, finely chopped

1 pound carrots cleaned and slices

2 tablespoons real maple syrup

2 tablespoons apple cider vinegar

1/4 teaspoon salt

1/8 teaspoon ground black pepper

2 tablespoons finely chopped fresh parsley

1 tsp. dried tarragon


Melt butter over medium-high heat in large nonstick pan (cast iron is best) and cook onion, stirring occasionally, until soft & translucent. Remove from pan & set aside.


Add garlic and carrots and cook 5 minutes, stirring occasionally, until

carrots are almost tender.


Stir in syrup, vinegar and tarragon. Continue cooking until liquid is reduced

and carrots are coated.


Season with salt and pepper and sprinkle with parsley.
