125 items preset per table is no small feat - especially with a limited amount of set-up time and 169 total guests. But it's so exhilarating when it all gets under way and the rhythm of the kitchen and floor staff and event timing all start to sync together. It's like a dance and it's so satisfying when it all comes together. Always grateful for this event and our friends at the Center for Musical Arts!
